Adding spinach to your omelette is a great way to increase your iron, vitamin C and E, potassium and magnesium intake. You can substitute or add any other green of your choice. Rocket Leave, Aragula, Kale… all go well!
Enhance the flavour by adding Sundried tomatoes, Siracha ( No Sugar Sauce), or simple Mustard sauce. Don’t forget to check the ingredients and make sure they don’t have added sugars.

Ingredients
- 1 Oz Baby Spinach (Or Greens Of Choice)
- 3 Eggs
- Salt To Taste
- ½ Tsp Butter
- 1 ½ Tbsp Low-Fat Feta Cheese
- 1 Tbsp Sun-Dried Tomatoes In Oil
- 8 Basil, Fresh
- 1 Tsp Sriracha (Optional And Adjustable Per Taste)
- ¼ Tsp Black Pepper (Freshly Cracked)
- 1 Slice Wholegrain Bread
Optional:1 Tsp Jalapeño (Diced)
Follow These Basic Steps For The Best Omelette Recipe:
- 1. Prep Fresh Ingredients:
Gather Your Ingredients And Equipment (An Omelette Pan Or A Medium-Large Non-Stick Skillet). Wash The Spinach In Warm Water If Needed And Let It Drain. - 2. Whip Eggs:
Whip Eggs Until Egg Whites And Yolks Are Completely Incorporated Homogeneously With No White Streaks Around. Season With Salt. - 3. Melt Butter:
In A Hot Pan, Melt The Butter Over Medium Heat Until It Is Bubbling. - 4. Cook Eggs:
Add The Whipped Eggs. Mix With A Spatula Or Chopsticks Until You See Small Curds Beginning To Form.
Reduce The Heat To Low And Spread The Egg Mixture Evenly Until The Edges Of The Pan. Cover With A Lid And Cook Until The Omelette Has A Custardy Top.
Tip: Turn Off The Heat Before Your Omelette Forms A Dry Surface And Turns Out Dry. - 5. Add Tomatoes, Basil And Spinach:
Add The Tomatoes, Basil And Spinach Over The Custardy Top. - 6. Fold In Half:
Fold The Omelette In Half Or Like A Crepe. - 7. Serve With Toppings
Serve Your Omelette On A Plate, Topped With Sriracha, Salt And Black Pepper. I Recommend Eating It Immediately With A Slice Of Whole Grain
