Your choice of greens is pretty much unlimited too. Arugula, Swiss chard, kale, collard greens, and so on.

As I mentioned, sundried tomatoes are my favorite choice but you can try something different, like fresh cherry tomatoes or roasted bell peppers.

Another idea is to add some beans, chipotle and sour cream with cilantro. It’s different but still a great choice.
